Steps: Hello Fresh Sweet Chili Pineapple Chicken

1) Preheat the oven

Move the shelf in the oven to the top rack position. This is where you will roast your vegetables. Preheat the oven to 425 degrees Fahrenheit.

2) Prep the fruit and vegetables

Prepare your fruit and vegetables. Wash and dry the bell peppers, shallots, ginger, and carrots. Peel the shallots and cut them into ½-inch thick slices. Slice the bell peppers in half and remove the cores. Cut the peppers into thin strips and chop the strips in half. Peel the carrots and slice them into ½-inch pieces.

Use the zester and zest one of the limes. You can also use a grater and slide the lime along the grate to zest it. Save the main body of the lime to use later for juice as well as the zest. Peel and grate the ginger.

3) Roast the vegetables

Place the carrot slices on a baking sheet and drizzle with oil. Add a dash of salt. Cook on the top oven rack at 425 degrees Fahrenheit for 10 minutes. Remove the baking sheet from the oven and add the shallots and bell pepper pieces.

Drizzle with oil and sprinkle with salt to season. Cook the vegetables on the top rack at 425 until they’re lightly charred, about 15 minutes. Prepare your rice while the vegetables are cooking.

4) Cook the rice

Put 1 tablespoon of vegetable oil in a pot and heat over medium-high heat. Add half of the minced ginger (about 1 thumb) and cook until fragrant, which will be about 30 seconds. Add the rice, ¾ cup of water, and a pinch of salt and stir briefly.

Bring to a boil then cover your pot and reduce the heat to low. Cook until the rice is tender and has absorbed all the water, about 15 to 18 minutes. Mix in butter and lime vest with the rice and fluff. Add a dash of salt to taste.

5) Cook the chicken

To begin preparing the pineapple chicken, drain your pineapple pieces and reserve 2 tablespoons of pineapple juice. Pat your chicken cutlets dry and add salt and pepper to all pieces. Pour a large drizzle of vegetable oil into a large pan and heat on medium-high. Add the chicken cutlets and cook thoroughly, flipping the chicken when the underside is browned.

Cook until both sides of the chicken are browned and the middle is cooked through. This will take about 3 to 5 minutes per side. When the chicken is done cooking, place the chicken on a plate and set it aside. Rinse your pan and wipe it out with a paper towel.

6) Make the sauce

Add a drizzle of vegetable oil to the pan and heat on medium-high. Add the pineapple chunk and stir, cooking until the pineapple is lightly browned, about 3 or 4 minutes. Stir in half of the ginger (1 thumb) and cook briefly for about 30 seconds.

Turn off the heat and add a squeeze of lime juice, pineapple juice, and the Thai sweet chili sauce. Add the chicken back to the pan and flip a few times to thoroughly coat the chicken in the sauce.

7) Garnish and serve

Chop the peanuts and fresh cilantro. Toss half the cilantro with the roasted vegetables. Plate your dish, putting chicken, rice, and vegetables on each plate. Top with the remaining cilantro and sprinkle with chopped peanuts. Add lime wedges as a final garnish. Serve warm. Enjoy!
